SEAFOOD RICE PAPER WONTON
Ingredients:
Shrimp - 1 cup
Imitation Crab meat - 1 cup
Green onions – 4-5 stalks, finely chopped
Carrots – 3 carrots, shredded
Ginger – 3 tablespoons, minced
Glass Noodles / Korean Vermicelli - 1 cup, chopped
Mayo - ½ cup
Oyster Sauce – 1 tablespoon
Jowa Jowa – 1 tablespoon
Rice Paper / Spring Roll Wrapper – About 10-12 sheets
Directions:
1. Boil glass noodles - follow directions on package
2. Shrimp (We use frozen thawed) - chop uncooked
3. Finely chop up all of the above ingredients.
4. Mix all ingredients in a mixing bowl.
5. Dip rice paper into warm water for a few seconds until it’s lightly soft (don’t over do it as it’s hard to handle if it’s too soft)
6. Add a couple of spoonfuls of the mixture (don’t over stuff it), wrap 4 sides into a flat, eggroll shape.
7. Cook on medium heat with light oil (olive or avocado oil) until golden and crispy. Don’t let them touch each other as they’re very sticky.
8. It reheats really well in the air-fryer. If you want extra crispiness, you can do this step. 400 degrees for roughly 3-4 minutes (temperature varies depending on your air-fryer and amount of wontons you’re cooking.
Garnish:
Wrap it with lettuce and top with cilantro! It’s yummy!
